Green Goddess Chicken Sandwiches

If you grilling won't work for you, you can broil the chicken breasts instead. See the note for cooking instructions. This take on Green Goddess sauce calls for 1/2 cup of fresh herbs, and you can use any combination you like. Some good ones to try: basil, chives, cilantro, and parsley, or chervil, mint, and tarragon.

  • 2 boneless chicken breasts
  • sunflower oil
  • 1 t coarse salt
  • 1/2 t black pepper
  • 1 clv garlic
  • 1/2 c fresh herbs
  • 1 avocado
  • 7 fl oz plain Greek yogurt
  • 1 T honey
  • 2 t lemon juice
  • 2 t white balsamic vinegar
  • 1/4 t ground white pepper
  • 4 sandwich rolls
  • 1 c baby spinach leaves

Green Goddess Chicken Sandwiches Directions

  1. Prepare grill for direct grilling over medium heat. Brush both sides of the chicken with sunflower oil and season with 1/2 teaspoon of the salt and the black pepper. Set on the grill, and cook, flipping once, until the chicken reaches an internal temperature of 165F and there’s no longer any pink, 8-10 minutes. Transfer to a plate and set aside. (See note below for broiling instructions.)
  2. Place the garlic in the bowl of a food processor. Pulse until minced. Add the herbs, and pulse until finely chopped. Add the avocado, yogurt, honey or agave, lemon juice, vinegar, white pepper, and the last 1/2 teaspoon of salt, and pulse until creamy and well-combined.
  3. Assemble the sandwiches on the rolls with grilled chicken, Green Goddess sauce, and baby spinach. Enjoy!
