- 2 t ginger
- 1/2 c cashews
- 5 c vegetable broth
- 1 onion
- 1 t salt
- 2 apples
- 2 t lemon juice
- 1 t cumin
- 1 t black pepper
- 1 c rice milk
- 4 carrots
- 2 pears
Jamaican Ginger Carrot Soup Directions
- Simmer all ingredients except rice milk and lemon juice. When carrots are tender, puree the mixture; add rice milk and lemon juice. Heat through and serve. Note: For a chunkier soup, puree only half the soup and add it back to the remainder with the rice milk and lemon juice.
