  • 2 t ginger
  • 1/2 c cashews
  • 5 c vegetable broth
  • 1 onion
  • 1 t salt
  • 2 apples
  • 2 t lemon juice
  • 1 t cumin
  • 1 t black pepper
  • 1 c rice milk
  • 4 carrots
  • 2 pears

Jamaican Ginger Carrot Soup Directions

  1. Simmer all ingredients except rice milk and lemon juice. When carrots are tender, puree the mixture; add rice milk and lemon juice. Heat through and serve. Note: For a chunkier soup, puree only half the soup and add it back to the remainder with the rice milk and lemon juice.
