Ingredients: 2 T butter or olive oil, 3 clv garlic, 3/4 c onion, 2 1/2 lb butternut squash, 4 c chicken broth, 1 bay leaf, 1 pn sugar, 1/2 t curry powder, 1 pn nutmeg, 2 c milk, salt and pepper
Ingredients: olive oil, 2 small eggplants (about 1-lb. total) sliced into 1/3-inch thick rounds, salt and pepper, 1 onion, sliced into rounds, 1 red or green pepper, cut into strips, 2 c tomato sauce or chopped fresh tomatoes, 4 T chopped fresh basil, 1 c grated mozzarella and/or parmesan cheese
