This hummus is a vibrant bright pink thanks to the addition of steamed beets.
Ingredients: 1 beet, 1 1/2 c cooked chickpeas, 1 clv garlic, 3 T tahini, 3 T lemon juice, 1/4 c water, 1 1/2 t cumin, 1/2 t salt
This colorful risotto is deceptively simple to prepare, but be warned that if you go with red beets instead of gold, it is a bit messy.
