Ingredients: 1 c black olives, 1 onion, 1 tomato, 1 c olive oil, 1 T Dijon mustard, 4 c brown rice, 1 c almonds, 1/2 c capers, 1 c red wine vinegar, 3 clv garlic
This hearty, main-dish salad is made of chunks of roasted butternut squash, ribbons of sweet, roasted red onion, and warm and nutty toasted pumpkin seeds.
Ingredients: 1 c pumpkin seeds, 2 red onion, 3 T olive oil, 2 butternut squash, salt, black pepper, 2 T Dijon mustard, 4 T red wine vinegar, 4 c baby spinach

Be sure to use Percorino in this salad for a nice, creamy dressing - other cheeses won’t work as well.
