Ingredients: 4 T red onion, 3 oranges, 1 grapefruit, 1 T red wine vinegar, 1 t Dijon mustard, 1 T olive oil, salt, pepper, 1 1/2 oz feta cheese, 1 T mint
If you have one, use a mandoline or V-slicer to slice the fennel as thinly as possible.
