Ingredients: 1/2 lb pasta, 1/4 lb smoked turkey breast, 10 green beans, 1/4 c red bell pepper, 1/4 c yellow bell pepper, 1 c red onion, 1/2 c grated parmesan cheese, 1 c caesar salad dressing, 1 T fresh parsley, 2 T pine nuts
Subtly spicy mizuna contrasts with crispy snow peas and savory, marinated tempeh in this meal-sized salad. Mizuna is related to mustard greens, but has much milder flavor.
Ingredients: 2 T apple cider vinegar, 2 T soy sauce, 2 T water, 1 t grated ginger, 1 t sesame oil, 8 oz tempeh, 2 T miso, 1 T Dijon mustard, 1/4 c olive oil, 3 T lemon juice, 1 clv garlic, 1 T maple syrup, 2 t coconut oil, 6 oz snow peas, 2 c red cabbage, 1 carrot, 2 c mizuna, 2 green onions, 1/4 c cilantro
Ingredients: 3 c bulk baby spinach, 1 smaller rio star grapefruit, 1 haas avocado, 1/2 c red wine vinegar, 1 1/2 c olive oil, 1/2 t salt, 1/2 t sugar, 1/4 t black pepper, 1 t Dijon mustard
This salad is spring in a bowl! On its own, it's a perfect dinner for one, and would also serve two to three as a side.
Ingredients: 3 T white wine vinegar, 1 t Dijon mustard, 1 shallot, salt, black pepper, 1/2 c olive oil, 4 sli bacon, 1 bn ramps, 3 c baby spinach, 1 c dandelion greens, 1/2 c jerusalem artichokes, 1/4 c feta cheese, violet petals

Ingredients: 2 c broccoli florets, 1 red onion, 2 c bok choy, 1 carrot, 3 c mung bean sprouts, 1/2 c peanuts, 1/2 c sesame seeds, 1 T hot sesame oil, 2 T brown rice vinegar, 1/4 c tamari, 1 t ground black pepper
Substitute small new potatoes or quartered golden potatoes for the purple ones, and this hearty salad will be just as good. It’s easily doubled.
