Ingredients: 2 T chopped almonds, 1/2 c chopped fresh mint leaves, 1/2 t finely grated orange zest, 2 T orange juice, 1 T olive oil, salt, 3 lb watermelon, 2 T white wine vinegar, 2 oz prosciutto

A main dish featuring the flavors of coconut and cinnamon. Try it with a salad of greens, avocado, and orange topped with cilantro vinaigrette and a loaf of crusty bread on the side.
